Frosty Strawberry Squares....Mmmm...

I've got a pan of this in my freezer now! I make it w/out the nuts, and don't always use the cream. I put the strawberries/sugar/eggwhites etc in my kitchen aid mixer, and let it go, until it's really fluffed up. You know those Strawberry Popsicles w/ crumble? That is sort of what this tastes like (a favorite of mine in about 5th grade at school~

FROSTED STRAWBERRY SQUARES
1 cup flour
1/4 cup brown sugar
1/2 cup chopped pecans (optional)
1/2 cup softened butter
2 cup sliced; fresh strawberries
2 egg whites
1 cup sugar
2 tablespoon lemon juice
1 pint cream; whipped (or just add some Kool-whip)


Directions

Mix flour, brown sugar, pecans and butter. Spread 2/3 of this mixture in buttered 13x9x2 pan. Bake at 350 for 20 minutes, stirring occasionally. Reserve remaining mixture for top. Combine egg whites, sugar, berries and lemon juice. Beat at high speed until stiff peaks form, (raises high in the bowl). Fold in whipped cream. Spoon over crumbs in pan. Sprinkle with remainder of crumbs. Freeze 6 hours or overnight. Cut in squares to serve. May be topped with whipped cream and whole strawberries. Beautiful!

a neat recipe for dipping fruit.. a large container of nonfat or lowfat plain yogurt,8 oz.cool whip and 2 pkg. of instant pudding mix...just mix them together and dip fruit..apples, strawberries ,grapes or whatever you might like..Enjoy...

Peanut Butter Cup Bars

If you love Reese's Peanut Putter Cups, then this is the dessert for you! They take little time to make, and no baking!! Here we go:

1 cup of margarine (or butter)
1 cup of peanut butter
1 1/2 cups of graham crumbs
2 1/2 cups of icing sugar

Melt peanut butter and margarine in microwave for 1 minute; stir then add icing sugar and graham crumbs. Mix well and press crumb mixture into a 9x13 greased pan.

1 1/2 cups of chocolate chips (semi-sweet)
1/2 cup of peanut butter

Melt choco chips and peanut butter in microwave for 1 min, stir and spread over crumb mixture (as if you were icing a cake). Refrigerate for at least 1 hour and cut into squares. Enjoy!

A neat idea for a summer picnic is fruit pizza. Just use refrigerated sugar cookie dough and spray a pizza pan with non-stick coating or wipe with butter. Lay dough out like a pizza crust and bake according to directions. You may need to bake a little longer than suggested. I know I bake a little shorter amt. of time as I like it a little doughy. Once it cools, cover top of cookie with whipped topping like a pizza sauce and then top with your favorite fruit. I recommend bananas, strawberries and kiwi. I also put dollops of whipped cream on top as well. Looks pretty and tastes yummy!!!!!!

Try this one- 6oz Dried, minced apricots
1/2 tin condensed milk
1 cup coconut
Mix well together and place mixture in refrigerator util firm. Roll into balls and roll in coconut. Refridgerate until serving.

Heres another one Jelly slice
1 tin condensed milk
1 pkt plain sweet biscuits ( for crumbs)
3/4 blk margarine
pkt Jelly
2 lemons
gelatine

Crush biscuits, add melted butter and press in long rectangle tin.
Refridgerate.
Combine condensed milk and lemon juice, mix 3 teaspoons of gelatine in 3/4 cup of hot water. Add to condesed milk slowly.
Pour over biscuit base.
Refridgerate.
Put Jelly crystals in a cup and fill with hot water. Dissolve.
Once condensed milk has set. Pour jelly liquid over top.
Refrigerate until set and then cut into squares.

Delicious.....

Mozzarella Chicken

1 can of condensed Campbell's tomato soup
1 clove of fresh garlic, minced
1 tsp basil
1 tsp oregano
4 boneless, skinless chicken breast
1 cup of shredded mozzarella cheese


Preheat oven to 400 F. Place chicken in an oven usable glass dish (with a lid). Combine soup, garlic, basil and oregano in a bowl, and mix. Pour over chicken, and bake for 20 to 30 minutes. Remove from oven and sprinkle shredded mozzarella on top. Place in oven for a couple of minutes until cheese is melted. Let cool for a few minutes before serving.

Very good, I always add extra cheese, cause I like mine cheesy!

This is an easy cheater version of a great summer salad we get at quilt camp. Sorry the amounts aren't exact but it's how I cook.

Strawberry Romaine Salad

1.Fill a big bowl with washed chopped Romaine

2. Add about a cup or more of sliced hulled strawberries...depends on how big your bowl is.

3. Pour on and gently toss about 1/2c purchased (I use Marzetti's) poppyseed salad dressing. You may want more or less depending on your own taste.

4. Sprinkle a good handful of sugar glazed almond slices on top. (I buy these packaged also)
You can use pieces of sesame sticks, too. Gives that sweet and salty taste alot of people like.

This can't be done very far ahead but I have everything ready and it only takes a minute to throw it together.

Iced Tea~ (similar to Snapple!)


1 Gallon Water, bring to boil

6 Tea Bags, Steep for 1 hour

2/3c.+ 2T Lemon Juice

Stir, chill, serve with ice!

Peanut Butter Ice Cream Pie

1 cup of peanut butter
1 litre of chocolate or vanilla ice cream
1 store bought graham crumb pie crust

Allow ice cream to soften for about 5 minutes. Mix ice cream and peanut butter with a beater. Place mixture in the graham pie crust and put in freezer until set, usually at least 2 hours. Slice and enjoy!

This is a refreshing treat, and my favorite combination is with chocolate!

Summer Vegie Dish! Yumm!!!

Cucumber Slices
Tomato Slices
Red onion Slices

Pour on Italian Dressing, sprinkle a little
dill weed, parsley flakes or anything to add a little
extra color (optional) They were crazy over this Simple dish at the picnic! We Love it! Garden fresh vegies are the best! Enjoy!

Bologna spread...

With your handy, prim, crank food grinder (fine disk),
grind up in a large bowl
1 pound of ring bologna (skin removed)
1 medium sized carrot
1/2 a medium sized onion

add 2 tablespoons sweetpickle relish,and enough mayo to make spreadable...ALWAYS make this the day before, it improves so much upon standing...
Been making this for hubby for 30 odd years ,now for SIL too...yummmmy

Mild Chili

This is another tried & true that I have been making for umpteen years...
In a deep pan, brown 1/2 pound of ground beef, add 1can of mild chili beans, mash these with a potato masher, add a second can of mild chili beans,a can of diced tomaots and a small can of mushroom pieces(drained), add 1/2 cup chopped onion, 1 can of water. stir, sprinkle top with chili powder to taste. stir again,cover and bring to boil then simmer till onions are clear.
As always, best if made the day before..

For another meal, take half the chili, add 1/2 can of whole corn (drained ), top with mashed potato mounds and bake for at 350 , till heated thru...

Here is a yummy recipe for dessert! We love them!

Nutty Buddy Chocolate Sandwiches

Butter or Margerine
2 slices of bread
Chopped nuts (your choice, I use pecans or walnuts)
Chocolate bar (shaved)
Powdered Sugar to taste

Lay you bread out. Spread butter on 1 side of each piece of bread. Turn butter side down. Add shaved chocolate, sprinkle on nuts (as many as you like) and close (butter side out) Place on a griddle or panini press to cook. Once grilled, cut into desired size and sprinkle powdered sugar all over.

YUM! Very Tasty! The kids will love these.

Other ingredients: I have also added jam preserve or peanut butter to this. Turned out great.

Okay Gals,

Here is the recipe for zucchini I promised you. And it is very yummy! Great for family gatherings too. People go crazy over this stuff. Hope you enjoy! It's one of my favorite brunch menus.

Oh My...Zucchini Pie

1 package Refridgerated Cresent Rolls -- 8 ounce size
2 teaspoons Dijon mustard
4 cups zucchini -- thinly sliced
6 tablespoons butter -- melted
1 cup onion -- chopped
2 tablespoons parsley -- minced
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/2 teaspoon black pepper
2 large eggs -- beaten
2 cups mozzarella cheese -- grated


Heat oven to 375 degrees. Press cresent rolls into deep dish pan, forming a crust. Spread mustard over crust. Saute' zucchini, onions and spices in butter. Cook about 10 minutes or until tender. In a large bowl, place eggs and beat, add vegetable mixture and cheese. Mix together well and put into crust. Bake for 20-25 minutes. Cut into pie shape wedges. Serves 8 or more depending on the size you cut.

Have Fun Making this one. Now that I brought it our, guess what I am going to make for dinner. Yes, I do eat breakfast for dinner.

I'm making this for my cookie exchange with homemade graham crackers.......yummy and easy. Thought you gals might like it for the holidays.

Chocolate Chip Cheesecake Cheese Ball

8-oz. pkg. cream cheese, softened
1/2 c. butter, softened
1/4 t. vanilla extract
3/4 c. powdered sugar
2 T. brown sugar, packed
3/4 c. mini semi-sweet chocolate chips
3/4 c. pecans or walnuts, finely chopped graham cracker sticks

Blend cream cheese, butter and vanilla in a mixing bowl until fluffy. Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Place on a large piece of plastic wrap; shape into a ball. Refrigerate for a least one additional hour (or less in the freezer if you need it FAST!). At serving time, roll ball in chopped nuts or cracker crumbs. Serve with regular graham cracker sections or graham cracker sticks for dipping. Makes about 2 cups.

The other thing I like about this recipe is that I generally have all the ingredients on hand so it's a good for a company "emergency"!

Buy the boxed pitted dates, unroll a date, stuff with a broken walnut meat, re roll, roll in granulated sugar..store in the fridg
I have made these every year since I was a child..it's a fun thing for the kids to help with...set up an assembly line...
