Ack! What happened to my recipe? I thought I posted it here...
Basically I marinated chunks of tofu in soy, garlic, ginger and a bit of rice wine vinegar. Next time I think I would add some sugar or sherry instead of the vinegar. The longer your marinate the tofu the better. I marinated it for about 2 hours. Then I simmered it with an equal amount of fresh shiitake mushrooms in chicken broth and the marinade (you could use veggie broth) for about 20 minutes or so, reducing the liquid. Finally I topped it with sliced scallions and a dribble of sesame oil. I would amp up the soy next time. But it was good. It's funny because I have lots of tofu dishes, but hardly any using shiitakes, that was the reason I tried the recipe in the first place.
