Message:   So do you do the whole "press" think to rid the tofu of some of its moisture?

I never can seem to get the stuff to stay in one piece, which is my biggest problem. I think I'm going to try the braise this week though. I've never used that cooking method on tofu.

Oh, do you serve it with rice?
